Mine is Paper Mario for the N64.
Why? Because it was the first RPG I've ever played, and the first game to really immerse me. I still remember how proud I was every time i completed a puzzle ( Although they were pretty easy -Even for a me when I was nine. )
Or how bad I felt whenever something tragic happened. I remember how i would always try to do JUST the right amount of damage necessary to beat an enemy, because for some reason I thought "perfect" battles got me SP, I think.
I'd use the Tattle ability on everything -People, locations, and every single enemy. I really got attached to some of the partners, and I still remember how sad I felt whenever one of them got attacked. After recently re-playing the game, I can see why: This game's just so damn well written! It's super-easy, so even nine-year-old me could beat it flawlessly, but It does have a few harder optional bosses, like the Dojo Master. It has tons and tons of dialog and flavor text, and all the locations have a pretty solid atmosphere.
My memories for this game are just so terribly fond, I;d have to say It's my All-Time favorite game.
My follow-up would probably be Fable.

Earthbound
Fantastic setting, oddly enough almost unmatched by any RPG to date; dialogue that is fun to read and well thought-out; tons of exploration, both rewarding and just for fun; simplified Dragon Quest-style battle system with great writing; one of the best soundtracks on the SNES (Mother 3's is slightly better); a consistent, unique visual style; post-modern art/music and story/game elements, both implied and assumed after multiple playthroughs; excellent parody of JRPGs of the time; critical of American culture but not appearing to be bashing it--it shows the culture for what it is; one of the only games I've ever played that actually succeeded at making me feel like I was in the game through a silent main character; the best final boss fight AND ending of any game I've ever played; plenty of downright disturbing scenes that still haunt me today...
I could go on and on. Mother 3's a close second, and not just because it's the sequel.

Psychonauts. It has some of the most brilliant level design of any modern game. Waterloo World, for example, is a multi-tiered level where the player can view a board game being played by two NPCs, become a piece on the board to play the game, and enter an even smaller world within the pieces. The story, humor, and voice acting are all top-notch, and the gameplay mechanics are engaging. If anything, Psychonauts suffers from a steep difficulty curve in its final third - you must really love 3D platformers or you will get frustrated. I think Psychonauts is available via Steam for $5. It's worth every penny.

Super Mario World? Final Fantasy VI? Super Mario RPG? Super Castlevania IV? Donkey Kong Country? Mega Man X?
Nope, all of those pale to my love of Earthbound.
Additionally, there's Fire Emblem: The Sacred Stones. This was my first Fire Emblem game (and my first Strategy game). I picked it up at Nintendo World in NYC around the time it came out, but I had no idea. I literally picked it up at random. It came with a free T-Shirt with a big red dragon on the back, which I still own and wear.
So then there's the game. Great story, great gameplay, some of my favorite characters from the series (ALWAYS the minor ones, like Amelia or Neimi), and have I mentioned the great story? The not-quite-final boss's motives for dragging the country to hell actually changes dramatically depending on whether you're controlling Eirika or Ephraim.
I was quite sad that neither of them showed up in Brawl.

FFX is amazing; the story is absolutely heart-wrenching. Some people can't get over the pacing, but it never bugged me. I hated 12 too, though. FFX's one of those games that I had to play twice to appreciate. The second time through, you start to notice all these little hints and foreshadowing about the outcome of the story, and the way it all weaves together in the end is fantastic. Tidus's fate was a shocker to me, and I still find it perfectly fitting and sad. His relationship with Yuna is the only meaningful romance I've seen in a video game--one that I felt legitimately affected the outcome of the story and was of importance. (If you think FF8's was, you need to replay it) The way their romance develops throughout the game is achingly subtle and real.
Plus Auron is badass, and Wakka is one of my favorite Final Fantasy characters.
Uh, didn't mean to go on such a long diatribe, but I always feel the need to defend FFX. XD It isn't the best in the series, though. Nothing beats the SNES trilogy.

See... I don't know how you can defend 10. Moogle did this when I was playing it. It's an awful game in every way, with the exception of the sphere grid. Story was so boring and never really picked up. It tried to at the end. It's just a "nice-looking" game, but nothing more really.

The story doesn't have to pick up; it's always moving along and building to its conclusion. The only complaint I really have is that Rikku and Lulu are blatant fanservice, but they're so insignificant in the overall storyline that I couldn't care less.
FFX has the best battle system of the FF games so far, I think. (Haven't played 13) It simplified everything WHILE keeping its roots intact, but opened the door for more strategy at the same time. Sadly Square doesn't seem to care about expanding on it. To say it's an awful game is absurd; there are so many bad games out there that are worse than pretty much any random game in the FF series.

God knows there are worser games than 10. I just recall when playing it all the way through, being bored out of my mind and only finishing it because I paid for it. I didn't care about any of the characters, Tidus was a whiny girl with daddy problems. Battles were enjoyable to an extent, the final boss was a douche/joke (which isn't to say a lot of final bosses aren't). The presentation of the story/pacing of it, is probably the worst part, which is what you said.

Star Wars: KotOR is definitely my favorite RPG, right behind FFVI.
I would say favorite game as well, but there is one game that while I might not consider it the best game ever made, I still never get tired of playing it. It's Sid Meier's Alpha Centauri. Not the most advanced graphics, but very, very, very in-depth and detailed gameplay. Haven't met that many people who have played it, though.

Godhand on PS2. It's shame I don't have my own Wii yet, cuz I wanna try No More Heroes and Mad World. Freakin' love this game. Tis a shame most people suck at it.
